What was this DP doing?

So yesterday I had the chance to work on set with a DP (who i wont name) and who was using a 5D Markiii in monochrome mode to previsualize shots.

He was shooting film.

Anyone else do this and have a guide as to how best to effectively use this as a tool?

Any insight into this?

Sounds like the modern equivalent of looking through a pan glass to desaturate the colour of a scene so you get an idea of how it will look in b/w.
