I would shoot color and then pull the color in post, that way all the information is there rather than shooting in grayscale. For instance if you want to add a little bit of color back in to the flesh tones the information is there already. I would also set my monitors on set to b&w if I knew the end product definitely wanted to be b&w just to make sure the contrast was where I wanted it to be.
