With great difficulty? There's no trick, it's just hard work doing it by eye and trying to seal the space of any drafts. Outside, it's near impossible to contain haze.

This is extremely tricky but there is a method to help guide your judgement on set that involves setting up a measuring station, if you will, with a black flag, a small light and using a spot meter. another trick i have seen a DP use - he would shine a laser pointer through the room, and that would give him an idea of the thickness of smoke

obviously he developed his own system and trained his eye to it

Let’s not complicate this guys. As David has already stated, judge it by eye. As Phil stated, one guy should be in charge of monitoring and controlling the atmosphere in concert with the judgment of the DP. It should simply look continuous as the shooting day progresses. That’s all.
