Scrim at the Side of Camera during Filming

I've noticed countless amount of time when I saw behind the scene footages where an assistant will be holding a scrim at either the side of the camera or behind the camera. Why do they do that for? Is it scrims or something else which I'm not aware off?

I completely agree with Stuart. The problem of wind is increased manifold in the mountains. A microphone on top of the camera to record sound as well as help in sync sound later becomes a challenge due to the wind. So asking someone to stand and hold reflectors, flat panels etc helps in blocking off the wind.
