Sure, it can be done - most companies or smart individuals doing this kind of thing like to keep methods to themselves so you'll likely be having to hire a package deal of both gear and operator... It can work both ways, you can program the moves in pre-vis get the camera moves you want, and then take the actual move the camera made (once all the slop and wotnot has worked its way into the rig) - maybe more important with longer lenses on arms with more articulation - a wide on a pan/tilt geared head will be fine.
