what official software lets you extract from DVD for editing?

I have some projects on DVD and DV-Cam. I don't have any sort of DV-Cam deck so I can't capture of any kind. However, we did burn to DVD too. I want to extract from my DVDs and edit in Final Cut and post on youtube.

Since you don't have to break the copywrite, it's not too hard. On a mac you could use cinematize or handbrake. Cinematize probably has more options.

You simply, select the range you want, select the format you want it in and extract.

Do note that taking from DVD is adding yet ANOTHER layer of compression though. original to dv-cam to dvd to dv to dvd (for your output presumably) - lots of generation loss.

On my mac I rip with Mac The Ripper and then convert the VOB-files into whatever video format I need through MPEG Streamclip (agreed - it's a very good program).

Don't even bother with trying to get stuff from the production companies I've shot as DV files or uncompressed video anymore. It's too much of a hassle and just ends up costing you money.
