Flat 70s Look

Can DSLRs be adjusted to shoot scenes similar to the flat look from movies of the 70s - like Shampoo, The Passenger, Chinatown, Five Easy Pieces, Bonnie and Clyde?

 

Any examples?

 

DSLRs tend to give a plasticy and enhanced image. I'd like to shoot a short in the style of those 70s movie: flat, pastel, and faded.

The usual, working from the thing the light is hitting all the way into the camera:

 

- Production design

- Lighting

- Filtration

- Camera setup

- Grading

 

Sorry to sound glib, but that's all it is really. Notice camera setup is only one of those things.
