Cameron used four different film stocks and pushed them all two stops:

 

Kodak 5284 Expression -- used on the night scenes on the Vegas strip

aerials and the Devil's lair scenes. Rated at 1600 asa

 

Kodak 5248 & 5274 - used on day scenes, pushed two stops to match the look of the pushed '84

 

Fuji Velvia Reversal - his favorite stock. rated at 200 asa

Keep in mind that the BMW Films are straight to video, so there's probably quite a bit of manipulation performed in post. Watching films on DVD isn't a perfect representation of the look of the negative or print it is transferred from. There's always the possibility of additional color correction, scratch removal, grain reduction, etc. You can really shoot any stock normally and give it a completely whacked out look in post if you're going straight to video.
