shoot b&w, print color

Sure, it's done all the time for movies that mix b&w and color negative and then print onto one color print stock (such as "JFK" which used Double-X b&w neg mixed in). You get a little more contrast because of the gamma of color print stock plus it's hard to time each shot to look as "gray" as possible (it tends to want to pick up a color tint). Many of the bulk release prints for "The Man Who Wasn't There" were on color stock from a b&w intermediate. Only a select few were on b&w stock.

 

If you are mixing 35mm color and b&w and cutting a negative, it's a good idea to put the b&w footage on a B or C roll.
